Ranginak, one of the most delicious sweets consumed during the holy month of Ramadan, has many fans among the people residing in the south cities of the country, especially Fars, Khuzistan, and Kerman. The sweet is appropriate for formal celebrations and fast-breaking meals.
Ingredients
Serves 5
Wheat flour, 500 g
Oil , 300 g
Confectioner 's sugar, 130 g
Black dates, 500 g
Pistachio powder, 1 tbsp
Cardamom, crushed, 1/2 dessertspoon
Cinnamon powder, 1 full tablespoon
Walnuts, 130 g
Take a non-stick fryingpan and grease it with some oil. Set it over the medium flame till hot. Sieve the flour and put inside the pan. Lower the heat and stir it frequently till brownish red in color; it doesn't have a raw smell anymore.
Then remove the pan from the heat and keep aside till cool. There is a point here and that's you can apply butter along with oil; 150 g of oil and 150 g of butter, this way you will give the recipe a far better taste.
Once the fried flour is cool, add in confectioner's sugar, cinnamon powder as well as powdered cardamom and mix the ingredients thoroughly.
Wash the dates. Using a knife, make a cut on them and remove the seeds. Put the seeded dates inside a colander to drain water. Don't forget to put a piece of walnut inside each date without ruining it's appearance. Here is another point; if you don't have enough time, you can apply the prepared dates with the walnut powder inside.
Put half of the fried flour inside a flat dish and try to flatten it with the back of your spoon or spatula. Then arrange the walnut-cored dates over and sprinkle a little cinnamon powder on top.
Now with the remaining half of the prepared flour cover the dates completely and press again with the back of your spoon till different layers are tied. Then top it with Confectioner 's sugar as well as cinnamon powder. Spread pistachio powder over it and at the end, cut the prepared sweet with a knife in your desired shapes, like a diamond or rectangle. Arrange the pieces on a platter and serve.
